Chili con everything

I've a wok that serves me dutifully as a salad dish, a cauldrn, as my biggest pot and of course as a wok. I love it.
Last weekend it was used to make one of my staple dishes, chili con everything. No matter how small I start, I end up with food for eight hungry faces.

Ingredients (as always the quantities are about five-ish, nothing precise here):
2 big onions, two big bell peppers, several big tomatoes AND tomato sauce, some chipotles adobados or simply any other hot chillies (but chipotles are fabulous!), an apple or two, two handfuls of any available meat (chicken breast, ground meat, kiełbasa), zucchini or eggplant, 2 cans of beans (different kinds: white, red, chickpeas), a can of corn, half glass of dry red wine (Shiraz, Malbec, Carmenere)
Spices:
savory, coriander (seeds), parsley, basil, mint, chili, sweet pepper, lime juice, garlick (fresh or dried)

Basically chop everything that needs to be chopped, heat two tablespoons of olive oil in the biggest pot you have, and put the hardest ingredients first. Add the softer ones gradually, stirring eveything well. Pour the tomato sauce and the wine. (BTW the best way to ensure that your wine goes well with your dish is to add said wine to the dish.:D) Sprinkle generously with the spices and herbs. And no, there's no such thing as too much coriander in this dish. ;-> Now the hardest part is waiting - aproximatelly for 30-40 minutes.

Serve with bread and wine and guacamole.
